Mamma's Beer Chicken
Mamma's Beer Chicken
Every Italian family has a version of this dish. This one is Mamma's, and once you try it, you'll understand why it never needs to change.
Ingredients
(Serves 2–3)
- 4 chicken thighs (bone-in)
- 1 brown onion, sliced
- 4 large carrots, peeled and cut into chunky rounds
- ½ glass of beer
- ½ glass of water
- 1 chicken stock cube
- Salt
- Fresh basil
- Fresh parsley
- Olive oil
- Chilli flakes to serve
- Toasted bread to serve
Method
- Heat a generous drizzle of olive oil in a wide pan over medium heat
- Add the onion and carrots and cook until lightly golden and softened
- Remove from the pan and set aside
- In the same pan, add the chicken thighs and brown well on both sides
- Pour in half a glass of beer and let it bubble, allow the alcohol to evaporate for a couple of minutes
- Return the onion and carrots to the pan
- Crumble in the stock cube and add half a glass of water
- Add a few leaves of fresh basil
- Cover and cook on low-medium heat for about 30 minutes until the chicken is cooked through and tender
- Finish with extra salt if needed and fresh parsley
- Serve with toasted bread and a sprinkle of chilli flakes on top
Mamma's Tips
- Don't rush the browning, that's where the flavour is built
- Let the beer really bubble before adding anything else back in
- The chilli on top at the end is the finishing touch, don't skip it
